A Lot-Like Cheesecake!

Ingredients:

  • Crust:
  • 1 1/2 cup raw almonds
  • 1 cup raisins
  • Filling:
  • 4 cups cashews (soaked >5 hours)
  • 1 large lemon, juiced
  • 3 Tbsp brown rice syrup
  • 2 tsp vanilla
  • Fruit Topping:
  • 1 1/2 cups fruit of your choice

Steps:

  • Crust: Process all ingredients together in a food processor and press into 8-9" pie pan.
  • Filling: Drain cashews and blend all ingredients until creamy.  Pour into crust and chill.
  • Fruit Topping: Arrange fruit of your choice on top of filling, blend a bag of frozen fruit as topping, or layer cranberry sauce recipies as topping.
