Ingredients:
- Crust:
- 1 1/2 cup raw almonds
- 1 cup raisins
- Filling:
- 4 cups cashews (soaked >5 hours)
- 1 large lemon, juiced
- 3 Tbsp brown rice syrup
- 2 tsp vanilla
- Fruit Topping:
- 1 1/2 cups fruit of your choice
Steps:
- Crust:
Process all ingredients together in a food processor and press into 8-9" pie pan.
- Filling:
Drain cashews and blend all ingredients until creamy. Pour into crust and chill.
- Fruit Topping:
Arrange fruit of your choice on top of filling, blend a bag of frozen fruit as topping, or layer cranberry sauce recipies as topping.
