Beet Dressing


  • 2 medium-sized cooked beets (boil until soft ahead of time and remove skin)
  • 1/4 cup olive oil
  • 1 Tbls. Eden's stoneground mustard
  • 1 Tbls. honey or yacon syrup
  • 1/4 cup apple cider vinegar
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground pepper


  • Combine all ingredients in a blender until smooth.
  • For a sweeter taste, add more beets; for more "zip," add more vinegar. Dressing will be thick.
