- 2 medium-sized cooked beets (boil until soft ahead of time and remove skin)
- 1/4 cup olive oil
- 1 Tbls. Eden's stoneground mustard
- 1 Tbls. honey or yacon syrup
- 1/4 cup apple cider vinegar
- 1/4 tsp sea salt
- 1/4 tsp freshly ground pepper
- Combine all ingredients in a blender until smooth.
- For a sweeter taste, add more beets; for more "zip," add more vinegar. Dressing will be thick.
