Beet Kvass

A 4oz glass AM and PM acts as a blood tonic, promotes regularity, alkalizes the blood, cleanses the liver and kidneys, and aids digestion. May be used in place of vinegar in salad dressings.


  • 3 medium orgainic beets, chopped coarsley, not grated
  • 1/4 cup whey
  • 1 Tbls. sea salt
  • filtered water


  • Place beets, whey, and salt in a 2 quart glass container and fill with filtered water. Stir well and cover. Keep at room temperature for 2 days before tranferring to the refrigerator. 
  • When most of the liquid is consumed, you may refill the jar with water and keep at room temperature 2 more days. The resulting kvass will not be as strong, but will still be beneficial. You may reserve some of the liquid to use as the onoculant instead of the whey.
  • To prepare the whey, line a strainer with a clean cotton dishtowel, pour in yogurt or seperated milk, cover and let drain for several hours. The liquid part is the whey and the solid is cream cheese.
