Chickpea Curry

Ingredients:

  • 1- 15 oz can of chickpeas, drained and rinsed
  • 2 Tbls. olive oil
  • 1 diced onion
  • 2 cloves minced garlic
  • 1'' piece fresh ginger, minced
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. turmeric
  • 1- 12 oz can of diced, undrained tomatoes
  • 1 cup diced bell pepper
  • 1 cup diced carrots
  • 1/2 tsp garam masala

Steps:

  • Saute onion, garlic, and ginger in oil. Add all ingredients except garam masala to crockpot. Cook on LOW for 6-9 hours. Add garam masala before serving.
