Ingredients:
- 1- 15 oz can of chickpeas, drained and rinsed
- 2 Tbls. olive oil
- 1 diced onion
- 2 cloves minced garlic
- 1'' piece fresh ginger, minced
- 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. turmeric
- 1- 12 oz can of diced, undrained tomatoes
- 1 cup diced bell pepper
- 1 cup diced carrots
- 1/2 tsp garam masala
Steps:
- Saute onion, garlic, and ginger in oil. Add all ingredients except garam masala to crockpot. Cook on LOW for 6-9 hours. Add garam masala before serving.
