Crockpot Greek Stew

Ingredients:

  • 2 cups cubed butternut squash
  • 2 cups chopped carrots
  • 2 cups chopped onions
  • 1 cup chopped zucchini
  • 1 14.5 oz can of undrained diced tomatoes
  • 2 15 oz drained and rinsed beans of your choice
  • 2 cups vegetable broth
  • 2 cloves minced garlic
  • 1 tsp cumin
  • 1/2 tsp sea salt
  • 1/2 tsp all spice
  • 1/4 tsp. pepper
  • 1/2 tsp. coriander

Steps:

  • Combine and cook 7-9 hours on low. May sprinkle with raw goat cheese before serving.
