Ingredients:
- 2 cups cubed butternut squash
- 2 cups chopped carrots
- 2 cups chopped onions
- 1 cup chopped zucchini
- 1 14.5 oz can of undrained diced tomatoes
- 2 15 oz drained and rinsed beans of your choice
- 2 cups vegetable broth
- 2 cloves minced garlic
- 1 tsp cumin
- 1/2 tsp sea salt
- 1/2 tsp all spice
- 1/4 tsp. pepper
- 1/2 tsp. coriander
Steps:
- Combine and cook 7-9 hours on low. May sprinkle with raw goat cheese before serving.
