Crockpot Salmon

Ingredients:

  • 2 Tbls. olive oil
  • 2 Tbls. ghee
  • 4 onions, coarsley chopped
  • 16 oz baby carrots
  • 4 cloves minced garlic
  • 1 1/2 lb salmon filet
  • 1/2 tsp sea salt
  • 1/8 tsp pepper
  • 1/2 tsp dried dillweed

Steps:

  • Add olive oil, ghee, onions, carrots, and garlic to the crockpot and cook 6-7 hours on LOW, stir once if possible.
  • Place salmon over vegetables with salt, pepper, and dillweed in crockpot. Cook on LOW 1-2 hours until salmon flakes when tested with fork. Test after 1 hour.
  • Place salmon on serving plate and top with onion mixture.
