Ingredients:
- 2 Tbls. olive oil
- 2 Tbls. ghee
- 4 onions, coarsley chopped
- 16 oz baby carrots
- 4 cloves minced garlic
- 1 1/2 lb salmon filet
- 1/2 tsp sea salt
- 1/8 tsp pepper
- 1/2 tsp dried dillweed
Steps:
- Add olive oil, ghee, onions, carrots, and garlic to the crockpot and cook 6-7 hours on LOW, stir once if possible.
- Place salmon over vegetables with salt, pepper, and dillweed in crockpot. Cook on LOW 1-2 hours until salmon flakes when tested with fork. Test after 1 hour.
- Place salmon on serving plate and top with onion mixture.
