Ingredients:
- 1 leek, chopped
- 4 garlic cloves, minced
- 6 plum tomatoes, chopped
- 1 green pepper, chopped
- 3 stalks of celery, chopped
- 2 large carrots, chopped
- 1 onion, chopped
- 1 tsp. fennel seed
- 1 cup white wine
- 3 cups vegetable broth
- 1 1/2 lb Salmon filet
Steps:
- Combine leek, garlic, carrots, and celery into crockpot.Top with pepper, tomatoes, onion, fennel, wine, and broth. Cover and cook on LOW 8-9 hours.
- Half and hour before serving, cut fish in 1/2 pieces and add to crockpot along with 1 tsp dried basil. Cook on HIGH heat 15-20 minutes unil fish flakes easily when checked with a fork.
