Fisherman's Stew

Ingredients:

  • 1 leek, chopped
  • 4 garlic cloves, minced
  • 6 plum tomatoes, chopped
  • 1 green pepper, chopped
  • 3 stalks of celery, chopped
  • 2 large carrots, chopped
  • 1 onion, chopped
  • 1 tsp. fennel seed
  • 1 cup white wine
  • 3 cups vegetable broth
  • 1 1/2 lb Salmon filet

Steps:

  • Combine leek, garlic, carrots, and celery into crockpot.Top with pepper, tomatoes, onion, fennel, wine, and broth. Cover and cook on LOW 8-9 hours.
  • Half and hour before serving, cut fish in 1/2 pieces and add to crockpot along with 1 tsp dried basil. Cook on HIGH heat 15-20 minutes unil fish flakes easily when checked with a fork.
