Ingredients:
- 1 green pepper, diced
- 1 red pepper, diced
- 1 clove of garlic
- 1 Tbls. olive oil
- 2 cups brown rice
- 4 cups vegetable broth
- 2 Tbls. minced parsley
- 2 cups spinach, kale, or swiss chard
Steps:
- Saute peppers and garlic in the oil. Place in crockpot with brown rice and broth. Cook on LOW for 5-6 hours.
- Turn crockpot to HIGH, add greens for 20 minutes before serving, cook until wilted. Garnish with parsley.
