Garlicky Rice

Ingredients:

  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 clove of garlic
  • 1 Tbls. olive oil
  • 2 cups brown rice
  • 4 cups vegetable broth
  • 2 Tbls. minced parsley
  • 2 cups spinach, kale, or swiss chard

Steps:

  • Saute peppers and garlic in the oil. Place in crockpot with brown rice and broth. Cook on LOW for 5-6 hours. 
  • Turn crockpot to HIGH, add greens for 20 minutes before serving, cook until wilted. Garnish with parsley.
