Lentil Casserole

Ingredients:

  • 5 cups vegetable broth
  • 8 oz sliced fresh mushrooms
  • 2 cups lentils, soaked overnight covered with 1' water, and then rinsed
  • 1 cup chopped carrots
  • 3/4 chopped onion
  • 1/2 cup chopped green or red pepper
  • 1/2 tsp. dried thyme
  • 1 bay leaf
  • 1/2 cup chopped celery
  • a few sprinkles of seaweed

Steps:

  • Combine and cook on LOW for 6 hours. Discard bay leaf before serving.
