Mayo (Egg, Soy, & Dairy-free)

Ingredients:

  • 1 bunch curly leaf parsley or a small jar of pimentos
  • 1 bunch mixed scallions
  • 4-8 big garlic cloves
  • 1 lemon, juiced or 2 T vinegar of any kind
  • 1-1-1/2 cups olive oil
  • Salt to taste

Steps:

  • Mix all together and blend (may add brown mustard to taste).
