Mexican Cauliflower

Ingredients:

  • 1 head Cauliflower
  • 3 medium sized tomatoes
  • 1 cucumber
  • 3 stalks celery
  • 1 sweet red pepper
  • handful of cilantro
  • juice of 1/2 lemon

Steps:

  • Pulse cauliflower in a food processor until its the size of rice or chop finely if you don't have one.
  • Place in large bowl.
  • Pulse remaining ingredients in processor until it's slightly chunky.
  • Mix the tomato mixture into the cauliflower mixture and serve.
