Ingredients:
- 1 head Cauliflower
- 3 medium sized tomatoes
- 1 cucumber
- 3 stalks celery
- 1 sweet red pepper
- handful of cilantro
- juice of 1/2 lemon
Steps:
- Pulse cauliflower in a food processor until its the size of rice or chop finely if you don't have one.
- Place in large bowl.
- Pulse remaining ingredients in processor until it's slightly chunky.
- Mix the tomato mixture into the cauliflower mixture and serve.
