Ingredients:
- 1 tsp olive oil
- 1-1/2 diced onions
- 1 green bell pepper, diced
- 4 minced garlic cloves
- 5 cups cooked black beans
- 1-1/2 cups vegetable stock
- 2 cups crushed tomatoes
- 1-1/2 Tbsp lime juice
- 1-1/2 tsp ground cumin
- 1/2 tsp crushed red pepper
- 2 Tbsp diced jalapeno peppers, optional
Steps:
- Saute onion, garlic, and pepper in oil 3-4 minutes until tender.
- Add beans, vegetable stock, tomatoes, lime juice, cumin, and pepper.
- Cook over medium heat for 45 minutes for flavors to blend.
