Miami Black Bean Soup

Ingredients:

  • 1 tsp olive oil
  • 1-1/2 diced onions
  • 1 green bell pepper, diced
  • 4 minced garlic cloves
  • 5 cups cooked black beans
  • 1-1/2 cups vegetable stock
  • 2 cups crushed tomatoes
  • 1-1/2 Tbsp lime juice
  • 1-1/2 tsp ground cumin
  • 1/2 tsp crushed red pepper
  • 2 Tbsp diced jalapeno peppers, optional

Steps:

  • Saute onion, garlic, and pepper in oil 3-4 minutes until tender.
  • Add beans, vegetable stock, tomatoes, lime juice, cumin, and pepper. 
  • Cook over medium heat for 45 minutes for flavors to blend.
