Minestrone

Ingredients:

  • 4 cups vegetable broth
  • 4 cups tomato juice
  • 1 tsp sea salt
  • 1 Tbls. basil
  • 1/8 tsp pepper
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 2 14oz diced, undrained tomatoes

Steps:

  • Cook on LOW for 7-8 hours. May add 1-2 cups cooked beans or cooked non-gluten grain, cover and cook on HIGH 15-20 minutes until warmed through.
