Oriental Chicken Salad

Ingredients:

  • 4 Cooked Chicken Breasts
  • 1 Cucumber, chopped
  • 2 C Edible Pea Pods, chopped or whole 1 Bunch Green Onions, chopped (optional)
  • Dressing:
  • 4 Tbsp Apple cider vinegar
  • 2 Tbsp Coconut aminos
  • 2 tsp freshly grated ginger
  • 2 tsp green onions or chives, finely chopped (optional)
  • 2/3 C Extra Virgin Olive Oil

Steps:

  • Combine dressing ingredients and shake vigorously. 
  • Combine with chicken and vegetables and mix until evenly coated. 
  • Eat right away, or if preferred cool, let sit in the refrigerator for 1-2 hours before eating.
