- 4 Cooked Chicken Breasts
- 1 Cucumber, chopped
- 2 C Edible Pea Pods, chopped or whole 1 Bunch Green Onions, chopped (optional)
- 4 Tbsp Apple cider vinegar
- 2 Tbsp Coconut aminos
- 2 tsp freshly grated ginger
- 2 tsp green onions or chives, finely chopped (optional)
- 2/3 C Extra Virgin Olive Oil
- Combine dressing ingredients and shake vigorously.
- Combine with chicken and vegetables and mix until evenly coated.
- Eat right away, or if preferred cool, let sit in the refrigerator for 1-2 hours before eating.
