Quinoa Carrot Hash

Ingredients:

  • 1 cup quinoa
  • 1/4 tsp sea salt
  • 1 large onion
  • 3 cloves garlic
  • 1 red pepper
  • 2 medium carrots, diced
  • 1/4 cup parsley
  • 2 Tbls. coconut oil

Steps:

  • Add quinoa to 2 cups of boiling water, reduce heat and simmer for about 15-20 minutes. 
  • Saute onion until translucent and garlic and red pepper until tender. 
  • Add carrots and parsley and saute for a few more minutes; fold in quinoa and saute until heated. Adapted from Donna Gates' The Body Ecology Diet.
