Ingredients:
- 1 cup quinoa
- 1/4 tsp sea salt
- 1 large onion
- 3 cloves garlic
- 1 red pepper
- 2 medium carrots, diced
- 1/4 cup parsley
- 2 Tbls. coconut oil
Steps:
- Add quinoa to 2 cups of boiling water, reduce heat and simmer for about 15-20 minutes.
- Saute onion until translucent and garlic and red pepper until tender.
- Add carrots and parsley and saute for a few more minutes; fold in quinoa and saute until heated. Adapted from Donna Gates' The Body Ecology Diet.
