Quinoa Croquettes

Ingredients:

  • 1 cup rinsed quinoa
  • 2 cups water
  • 1 Tbls. tahini
  • 1/2 tsp sea salt
  • 2 Tbls. minced onion
  • 2 Tbls. minced parsley
  • 1 tsp ground cumin
  • 2 Tbls. coconut oil

Steps:

  • Bring water to boil. Add quinoa, reduce heat and simmer for 20 minutes. Cool until you can touch it, but do not refrigerate it. 
  • Add remaining ingredients to cooked quinoa, except oil. Mix and shape into 6-8 patties. Heat coconut oil and brown patties.
